Dude, there is nothing wrong with sour beers. It will not hurt you and it will expand your palate if it indeed is lacto. Taste it. Go buy a bottle of petrus oak aged pale or brouwerij von honsebrouck fond tradition. Compare to your beer.

If you're into wine make sure you drive over to Sonoita which is about an hour drive.

Looks like an off brand to me. Try any of Georg Schneider Weiss beers, my favorite is edel Weiss. Konig Ludwig and franziskaner are also good commercial examples. My favorite American hefe is sierra Nevada kellerweiss.

I think there is room in the industry, especially now, for niche products/small scale manufacturers. Stuff along the lines of Paul components, Retroshift, etc.

Also, the ebike industry is seeing increasing demand. If it's something you're interested in I can turn you on to a budding diy market that is clamoring for small scale commercial solutions/sound engineering. I'm talking drivetrain parts that could easily be manufactured in Asia.

The salt river is a festering pool of bad genes. I would stay away. I once watched one guy bite off part of another guy's ear during a fight. I was there on a kayak, not to float the river like everyone else. Lots more fun to be had elsewhere.

Sour mash is the way to go for homebrew, or just use lactic acid drops.

The thing that you want to do with a sour is use a very simple base beer. New Belgium has two base beers for their sours, light and dark. Named Oscar and Felix.

At 25 miles in a day I really don't think you want a hybrid unless it's 12 two mile trips a day we're taking about. Also, a hybrid can handle unpaved hard pack surfaces but not really a trail. The cheap suspension fork on a hybrid is heavy and robs efficiency.

I'd recommend a flat bar commuter with clearance for larger tires if you want to go unpaved. Alternatively a cyclocross bike is a road bike that can take a serious beating but is still highly efficient on road. Drop bars are the norm here and may pose a comfort issue for some.

What about a rigid 29er with roadish tires?

Suspension is overrated for most on road riding.
