I didn't bother to look for R-value. I went with expanded polystryrene because of the price. Just went for some 1-1/2 or 2 inch foam for structural stability and some thinner sheets for the internal walls. Getting foam with moisture resistance would be a good idea too. Mine was a pretty quick and cheap build because I needed it fast and didn't want to spend too much. With the expanded poly, cutting for exact fit is pretty tricky so I cut grooves for better fits and used a lot of duct tape. Also used a lot of Gaps and Cracks insulating sealant and liquid nails to hold it all together. It works but it's a pain to be changing bottles as much as I did. My fan rarely turned off.

I built one last summer. I live in arizona so the house sits at around 82-84 degrees since it would cost an arm and a leg to keep it much cooler. I would have two 1 gallon milk jugs and probably 5 frozen water bottles that would all be changed at least twice daily to keep my temp around 65. I've been brewing like crazy during the summer since its soo much easier to ferment in a house thats 68.
