If you force carbonate, you should do it cold. The CO2 will dissolve better. Carbonation level is a function of CO2 pressure and temperature. You can use a calculator or chart to figure out what pressure and temperature you should use to get your desired level of carbonation.

I've never made a cider, but 1 gram of yeast per gallon sounds like a crazy low pitching rate.

They don't really print on paper. At least the ones that I have ordered are on what I would call vinyl. That makes them completely water proof and also reusable.

I have an identical cooler to the one linked to in that post, with a false bottom. I bought the cooler at a local hardware store, for literally twice what the one from Amazon is selling for. The false bottom came from Nothern Brewer. I don't own the burner or the kettle, but these are two specific models that are widely used by homebrewers. The burner is a good deal and the kettle is a very, very good deal.

It's two orders and should be pretty straight forward. I didn't go this exact route, but I do have a similar setup. I pulled my equipment together from multiple sources.

I would leave it in primary until it's done, maybe a week and keg it or bottle it. Wheat beers do not have a super long shelf life and are best when fresh.

I didn't make it, it's from Cask Widge in England. It's a part of a larger cask serving system. Agreed, they are pricey. I think the price could come down if there were more demand for this. I don't know what wouldn't be needed on the float, seems like all parts of essential. It would be great to see a DIY version of this that works well.
